So what does one do with modifiers when modifiers make it so that you can’t hit on a 6+. Say with a -1 to hit. So needing 7s to hit. Does a 6 still always hit? I know 1s are always a fail.

I believe that the only no matter what is that 1 always fails. It is indeed possible to have a complete inability to hit due to modifiers.
No a 6 is not always a hit, there will be times where you require a 7+ or worse to succeed.
A 1 is always a miss, and anything modified below a 1 counts as a 1 but this does not apply to 6s. Dice can be modified above a 6, and modified results of a 6 roll, can miss.
I believe this was explained in the designer commentary / FAQ thing but I don’t have that or the rule book in front of me at the moment.
Worth noting Smite is ‘more than 10′ rather than ’10+’ (as Jeff says) to get the d6 wounds.
Mathematically 10+ would be doubling your chance of getting those d6 wounds compared to the 11+ you actually need.

when you talk about your knight + guilli list. Do you reroll the wounds and hits for them? Because from my understanding that doesnt work.
